  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Simmer apple cider in a saucepan until reduced to about 2 tablespoons of syrup.
  2. For the cheesecake filling, mix cold cream cheese, granulated sugar, and vanilla until smooth; refrigerate.
  3. In another bowl, cream butter and sugars together. Add egg yolks and vanilla; mix well.
  4. Gradually incorporate flour, baking powder, baking soda, salt, and spices until combined.
  5. Preheat oven to 350°F (175°C). Form cookie dough around cheesecake filling into balls.
  6. Bake on parchment-lined sheets for about 11 minutes until edges are golden.
  7. While warm, brush with melted butter and sprinkle with spiced sugar mixture.
