  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup (120 ml) milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)
  • ¾ cup (93 g) all purpose flour (for crumble topping)
  • ¼ cup (50 g) packed light brown sugar (for crumble topping)
  • 2 Tablespoons granulated sugar (for crumble topping)
  • 1 teaspoon ground cinnamon (optional, for crumble topping)
  • 4 Tablespoons (56 g) unsalted butter (melted, for crumble topping)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. For the crumble topping, whisk together flour, sugars, and cinnamon in a bowl. Stir in melted butter until clumpy; set aside.
  3. In another bowl, mix flour, baking powder, salt, and cinnamon for the batter.
  4. Cream together brown sugar, granulated sugar, and room temperature butter until fluffy. Add eggs one by one, followed by sour cream and vanilla.
  5. Gradually incorporate dry ingredients into the wet mixture, alternating with milk. Gently fold in diced apples.
  6. Fill muffin cups three-quarters full with batter and top generously with crumble mix.
