  • 1 cup apple vinegar
  • 2 cups beef or lamb broth

  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced

Instructions

  2. Sear lamb: In a large Dutch oven over medium heat, add olive oil and sear lamb shanks until browned on all sides. Remove and set aside.

  4. Add liquids: Stir in apple vinegar, broth, tomato paste, rosemary, thyme, and bay leaves.
  5. Combine: Return seared lamb shanks to the pot ensuring they're submerged in the liquid. Bring to a simmer.

  7. Roast potatoes: While the lamb cooks, toss diced potatoes in olive oil and seasonings; roast at 400°F (200°C) until golden brown.
