  • 2 soft- or medium-boiled eggs
  • 1 ripe avocado, mashed or sliced
  • 56 cherry tomatoes, quartered
  • 1 tsp fresh chopped mint or parsley
  • 1 tsp sesame seeds
  • Salt and freshly cracked black pepper to taste
  • Optional: lemon juice

Instructions

  1. Boil the eggs in boiling water for 7 minutes for a jammy yolk. Cool under cold water, then peel and slice.
  2. Mash or slice the avocado into a serving bowl and season lightly with salt, pepper, and optional lemon juice.
  3. In a separate bowl, toss quartered cherry tomatoes with chopped herbs and a pinch of salt.
  4. Arrange the avocado at the bottom of your bowl and top with egg slices and tomato mix. Sprinkle with sesame seeds and cracked black pepper.
