  • 1/2 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Boil the halved baby potatoes in salted water until fork-tender (15–20 minutes). Drain and let cool.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper to create the dressing.
  3. In a large mixing bowl, combine cooled potatoes with red onion and cherry tomatoes. Pour dressing over the mixture and gently toss.
  4. Fold in fresh parsley and basil just before serving.
  5. Serve warm or chilled, allowing flavors to meld for at least 30 minutes.
