  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar; whisk until smooth. Beat in eggs, oil, and vanilla extract. Gradually mix in dry ingredients until just combined.
  4. Fill each muffin tin about 3/4 full with batter.
  5. In another bowl, beat cream cheese until smooth; add granulated sugar, egg yolk, and vanilla extract; mix well.
  6. Top each muffin with about 1 tablespoon of cream cheese mixture and swirl gently with a toothpick.
  7. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean. Cool for about 10 minutes before serving.
