  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 8 oz cream cheese (room temperature)
  • Additional ingredients for cream cheese swirl

Instructions

  1. Preheat oven to 375°F and line muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until smooth. Beat in eggs and oil; gradually add dry mixture until combined.
  4. Fill each muffin cup about 3/4 full with batter.
  5. In another bowl, beat cream cheese until smooth and mix in additional sugar and egg yolk.
  6. Top each muffin with cream cheese mixture and swirl gently with a toothpick.
  7. Bake for 18–20 minutes until a toothpick comes out clean; cool before serving.
