  • 2 tablespoons granulated sugar
  • ⅓ cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs, room temperature
  • ½ cup rainbow jimmies (or sprinkles)
  • 68 ounces whipped cream

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter; stir until well mixed and press into the bottom of a springform pan.
  3. In another mixing bowl, beat the softened cream cheese until smooth using an electric mixer; gradually add in granulated sugar and continue mixing until well combined.
  4. Mix in sour cream and vanilla extract until smooth, then add eggs one at a time, blending well after each addition; gently fold in rainbow jimmies.
  5. Pour the filling over the prepared crust in the springform pan and bake in preheated oven for about 60 minutes or until set but slightly wobbly in the center.
  6. Once done, turn off the oven and leave cheesecake inside for an hour to cool gradually.
  7. Remove from oven and let cool completely at room temperature; refrigerate for at least 4 hours or overnight before serving.
  8. Top with whipped cream before slicing into pieces.
