  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup bourbon BBQ sauce
  • 1 cup shredded cheddar cheese
  • 4 sub rolls
  • 8 slices crispy turkey bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, smoked paprika, salt, and black pepper until just combined.
  3. Form the mixture into meatballs about 1.5 inches in diameter.
  4. Heat olive oil in a skillet over medium heat and brown the meatballs for about 5–7 minutes.
  5. Pour bourbon BBQ sauce over browned meatballs and simmer on low for 10 minutes.
  6. Slice sub rolls lengthwise and toast them in the oven for about 5 minutes.
  7. Assemble subs by filling each roll with meatballs, topping with cheese and turkey bacon.
  8. If desired, return assembled subs to the oven for an additional 2–3 minutes to melt the cheese.
  9. Serve immediately with extra bourbon BBQ sauce on the side.
