  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef broth
  • 2 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Season lamb shanks with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat. Sear shanks on all sides until browned; remove from pot.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened (5-7 minutes). Stir in tomato paste and cook for an additional minute.
  3. Pour in apple vinegar and broth while scraping up any brown bits from the bottom. Bring to a simmer.
  4. Add rosemary, thyme, bay leaves, and return lamb shanks to the pot ensuring they are submerged in liquid. Cover with a lid.
  5. Preheat oven to 325°F (163°C). Transfer the covered pot to the oven and braise for about 2-3 hours until tender.
