  • 12 eggs
  • 1 stalk of celery (finely chopped)
  • 1 green onion (finely chopped)
  • 4 tablespoons mayonnaise
  • 2 tablespoons Creole mustard
  • ¼ teaspoon Cajun seasoning
  • 1 teaspoon hot sauce

Instructions

  1. In a saucepan, cover the eggs with cold water and bring to a boil over medium-high heat. Once boiling, cover and remove from heat; let sit for 11 minutes.
  2. Cool the eggs under running water, then peel and cut them in half lengthwise. Scoop out the yolks into a mixing bowl.
  3. Mix the yolks with chopped celery, green onion, mayonnaise, Creole mustard, Cajun seasoning, and hot sauce until smooth.
  4. Fill each egg white half with the yolk mixture and garnish with additional green onions if desired.
