  • 2 boneless, skinless chicken breasts
  • 4 tablespoons olive oil (divided)
  • 2 medium sweet potatoes, sliced
  • 2 cups broccoli florets
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt & pepper to taste
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato slices in 2 tablespoons olive oil, salt, and optional cinnamon. Spread evenly on a baking sheet and roast for 25-30 minutes.
  2. While sweet potatoes roast, rub chicken breasts with remaining olive oil and seasonings. Grill or sear in a pan over medium-high heat until golden brown and cooked through (about 6-7 minutes per side).
  3. Steam broccoli in a pot with boiling water for 5-6 minutes until tender-crisp and season lightly with salt.
  4. Layer broccoli first in meal prep containers, followed by sweet potatoes and sliced chicken. Cool before sealing and refrigerating.
