  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix brown sugar, softened butter, and cinnamon to create the filling.
  3. In a large bowl, combine all dry ingredients: flours, corn starch, baking soda, baking powder, and salt.
  4. Cream cold cubed butter in a stand mixer until smooth before adding granulated sugar.
  5. Mix in eggs and vanilla until combined.
  6. Gradually incorporate the dry mixture until just combined.
  7. Shape dough into a rectangle and spread the cinnamon filling evenly.
  8. Roll up the dough tightly and slice into equal pieces.
  9. Bake for 9–11 minutes until edges are golden brown.
  10. Cool on a rack before frosting with cream cheese mixture.
