  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half
  • 8 oz Cool Whip
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Combine graham cracker crumbs and sugar in a bowl. Stir in melted butter until mixed well. Press into the bottom of a 9×13-inch baking dish to form the crust.
  2. Beat softened cream cheese and powdered sugar until smooth. Add coconut extract and fold in one container of Cool Whip. Spread over the crust.
  3. Whisk together pudding mix and half-and-half until thickened. Spread over the cream cheese layer.
  4. Top with remaining Cool Whip and sprinkle with toasted shredded coconut.
  5. Refrigerate for at least 6 hours before serving.
