  • 2 Vegan Gelatin sheets (4g)
  • 200ml heavy cream
  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 120g powdered sugar (for shortbread)
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • 3 egg yolks

Instructions

  1. Whip heavy cream and mascarpone in a chilled bowl until soft peaks form. Gradually add powdered sugar.
  2. Soak gelatin sheets in cold water. Heat coconut milk, dissolve gelatin, and fold into the whipped mixture.
  3. Pour mousse into hemisphere molds with a scoop of gooey cocoa spread; freeze for at least 6 hours.
  4. For Cocoa Breton Shortbread: Combine ingredients to form a dough, chill, roll out, cut circles, and bake at 180°C (350°F) for 10 minutes.
  5. Assemble by placing each dome on a cooled shortbread base; allow to thaw before serving.
