  • 500g shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 red chili, sliced (adjust to taste)
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 can (400ml) coconut milk
  • 1 tbsp tomato paste
  • Salt & pepper to taste
  • Fresh cilantro for garnish
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook the rice by rinsing it under cold water and then combining it with water and salt in a pot or rice cooker. Bring to a boil, reduce heat, cover, and cook until fluffy (about 15-20 minutes).
  2. In a large sauté pan, heat olive oil over medium heat. Sauté onions until soft (about 5 minutes). Add garlic, ginger, and chili; cook for another 2-3 minutes.
  3. Stir in curry powder, turmeric, paprika, and tomato paste; mix well. Pour in coconut milk and bring to a simmer for about 5 minutes.
  4. Add shrimp to the pan; season with salt and pepper. Cook for approximately 4-5 minutes until shrimp turn pink.
  5. Serve over fluffy rice and garnish with fresh cilantro.
