  • 1/4 cup granulated sugar
  • 1/4 cup liquid coconut oil
  • 1/4 cup sour cream (or Greek yogurt)

  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 4 ounces softened cream cheese (lite is acceptable)
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, both sugars, coconut oil, sour cream, vanilla extract, and spices until well combined.
  3. Gently fold in the flour along with baking powder and baking soda until just combined.
  4. In another bowl, mix the softened cream cheese with granulated sugar and flour until smooth.
  5. Pour two-thirds of the pumpkin batter into the loaf pan, spread the cream cheese filling on top, then add the remaining pumpkin batter.
  6. Bake for about 48 minutes or until the top is golden and a toothpick comes out clean from the center. Let cool before slicing.
