  • 1 tsp vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  3. In a large bowl, mix eggs, melted butter, oil, brown sugar, and vanilla until smooth.
  4. Combine dry ingredients into wet mixture until just blended; fold in zucchini and three-fourths of the chocolate chips.
  5. Pour batter into prepared pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50–60 minutes or until a toothpick comes out mostly clean.
  7. Allow to cool in the pan for 15 minutes before transferring to a wire rack.
