  • 8 oz. dry rotini pasta
  • 9 oz. hard salami, chopped
  • 6.5 oz. pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • 8 oz. mozzarella pearls
  • ½ cup pepperoncini, sliced
  • ¼ cup red onion, sliced thin
  • ⅓ cup fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the dry rotini pasta and cook according to package directions until al dente.
  3. Drain the pasta using a colander and set aside to cool completely.
  4. In a small bowl or jar, combine olive oil, red apple vinegar, minced garlic cloves, Italian seasoning, red pepper flakes, salt, and black pepper.
  5. Whisk together until well blended or seal the jar tightly and shake vigorously.
  6. Chill the vinaigrette in the refrigerator while preparing the salad.
  7. Chop the hard salami and pepperoni into bite-sized pieces.
  8. Halve the cherry tomatoes and slice both olives and red onion thinly.
  9. Thinly slice fresh basil leaves.
  10. In a large mixing bowl, combine cooled pasta with prepared ingredients including salami, pepperoni, artichoke hearts, tomatoes, olives, pepperoncini, mozzarella pearls, red onion, and basil.
  11. Pour your desired amount of vinaigrette over the top and toss gently until everything is evenly coated.
  12. You can serve immediately or chill in the refrigerator for 30 minutes to 1 hour to let flavors meld.
  13. Before serving, sprinkle with shredded Parmesan cheese if desired, and add more fresh basil on top for an extra touch of flavor.
