  • 2 ⅔ cups pumpkin (cubed)
  • ⅔ cup starchy potato (cubed)
  • ½ tsp salt
  • ¾ cup flour
  • 2 tbsp vegan butter
  • 2 tsp sage (densely packed)

Instructions

  1. Cook the pumpkin and potato cubes in boiling water until soft, about 15 minutes. Drain well.
  2. In a mixing bowl, mash the cooked vegetables together until smooth. Stir in salt and gradually add flour until combined.
  3. On a floured surface, roll the dough into long ropes, about half an inch thick, then cut into bite-sized pieces.
  4. Use a fork to create ridges on each piece for better sauce adherence.
  5. Boil the gnocchi in salted water until they float to the surface, approximately 2-3 minutes.
  6. In a skillet, melt vegan butter and add sage. Toss cooked gnocchi in the sage butter mixture before serving.
