  • 2⅔ cup flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda

  • ¼ tsp salt
  • ½ cup brown sugar
  • ½ cup sour cream
  • ½ cup whole milk
  • 1 large egg
  • Coarse sugar (for sprinkling)
  • ½ cup powdered sugar (for glaze)
  • 12 tbsp fresh squeezed lemon juice (for glaze)

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a microwave-safe bowl, melt butter with molasses until combined. Let cool.
  3. In another bowl, mix flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. Combine brown sugar, sour cream, milk, and egg into the cooled molasses mixture.
  5. Gently fold the wet ingredients into the dry ingredients until just combined.
  6. Fill muffin tray cavities to the top and sprinkle coarse sugar if desired.
  7. Bake at 425°F for 5 minutes; then reduce heat to 350°F and bake for an additional 11-14 minutes until a toothpick comes out clean.
  8. Cool in the pan briefly before transferring to a wire rack.
  9. Prepare the lemon glaze by mixing powdered sugar with lemon juice; drizzle over cooled muffins.
