  • 8 oz dry macaroni noodles
  • ½ cup finely diced sweet gherkins
  • ¾ cup finely diced red bell pepper
  • ⅓ cup thinly sliced celery
  • ⅓ cup finely diced red onion
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red apple vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp garlic powder
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook the macaroni in salted water until al dente. Drain and rinse under cold water; toss with olive oil.
  2. In a large bowl, combine the cooked macaroni with gherkins, red bell pepper, celery, and red onion.
  3. In another bowl, whisk together mayonnaise, sour cream, pickle juice, vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper.
  4. Pour dressing over the macaroni mixture and toss gently to coat evenly.
  5. Cover and refrigerate for at least one hour before serving. Stir before serving and adjust seasoning as needed.
