  • 3 bell peppers (halved)
  • ⅔ cup uncooked white rice
  • ½ cup cherry tomatoes (quartered)
  • ½ cup kalamata olives (chopped)
  • ½ cup feta cheese (divided)
  • 1 small red onion (diced)
  • 2 cloves garlic (minced)
  • 1 zucchini (diced)
  • Fresh dill
  • Olive oil, salt, pepper, Italian seasoning

Instructions

  1. Preheat oven to 350°F.
  2. Cook rice according to package instructions.
  3. In a skillet, heat olive oil over medium heat. Add ground chicken, salt, and pepper; cook until no longer pink.
  4. Stir in Italian seasoning, onion, garlic, and zucchini; cook for an additional 2 minutes.
  5. In a bowl, combine cooked rice with chicken mixture, tomatoes, olives, half the feta cheese, and dill.
  6. Stuff each bell pepper with the mixture; sprinkle remaining feta on top. Place in baking dish with water at the bottom and cover with foil.
