6 ounces mozzarella pearls
1 demi baguette
½ cup basil pesto
Gel food coloring (black)
12 ounces cherry tomatoes
Olive oil
Fresh basil
Balsamic vinegar glaze
Instructions
Preheat oven to 350°F.
Prepare cheese skulls by filling a silicone skull mold with mozzarella pearls and baking for 6-7 minutes until melted. Let cool.
Increase oven temperature to 475°F. Halve cherry tomatoes and roast them cut side down on a parchment-lined baking sheet with olive oil, salt, pepper, and red pepper flakes for 10-15 minutes.
Slice the baguette into ½-inch pieces, toast in the oven for 8-10 minutes until golden.
Mix basil pesto with black gel food coloring until desired color is achieved.
Assemble bruschetta by spreading black pesto on toasted baguette slices, topping with roasted tomatoes and mozzarella skulls.
