  • 2 large egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup white sugar
  • 1 stick unsalted butter (softened)
  • 2 cups confectioner’s sugar
  • 2 tbsp milk
  • Purple gel food coloring

Instructions

  1. Preheat oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. Whip egg whites and cream of tartar until foamy; gradually add sugar and mix until stiff peaks form.
  3. Pipe meringue ghosts onto the prepared sheet and bake for 2 hours; leave in the oven for an additional 30 minutes.
  4. While meringues cool, beat softened butter, confectioner’s sugar, milk, and purple food coloring until smooth.
  5. Frost cooled cupcakes generously with purple buttercream.
  6. Decorate meringue ghosts with black frosting for eyes and mouths, place on frosted cupcakes.
