  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 2 large eggs
  • Fresh basil and parsley

Instructions

  1. Preheat oven to 400°F (204°C). Halve bell peppers lengthwise, remove seeds, and place cut side up on a parchment-lined baking sheet. Brush with olive oil.
  2. Bake for 20 minutes until softened; drain excess water.
  3. Microwave spinach until wilted; chop and combine with ricotta, mozzarella, parmesan, eggs, herbs, and spices in a mixing bowl.
  4. Stuff each pepper half with the filling mixture.
  5. Combine breadcrumbs with oil; sprinkle over the stuffed peppers.
  6. Bake at 350°F (176°C) for another 30 minutes or until golden brown.
