- 1 lb lean ground beef
- 1 can (16 oz) refried beans
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 1 can (10 oz) red enchilada sauce
- 6 medium flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives
- Preheat the oven to 375°F and spray two baking sheets with non-stick spray.
- Arrange three tortillas on each baking sheet and bake for 3-5 minutes until golden, flipping halfway through.
- In a skillet over medium-high heat, cook the ground beef until browned; drain excess grease.
- Add taco seasoning and water to the beef, bring to a boil, then simmer for 10 minutes.
- Warm refried beans in a microwave-safe bowl for 1-2 minutes.
- Spread a layer of beans on one tortilla, top with one-third of the ground beef mixture, and layer another tortilla on top.
- Spread enchilada sauce over the top tortilla and add cheeses along with fresh toppings.
- Repeat layering with remaining tortillas and transfer back to the oven; bake for about 5 minutes until cheese is melted.
