  • 1 lb lean ground beef
  • 1 can (16 oz) refried beans
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 can (10 oz) red enchilada sauce
  • 6 medium flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat the oven to 375°F and spray two baking sheets with non-stick spray.
  2. Arrange three tortillas on each baking sheet and bake for 3-5 minutes until golden, flipping halfway through.
  3. In a skillet over medium-high heat, cook the ground beef until browned; drain excess grease.
  4. Add taco seasoning and water to the beef, bring to a boil, then simmer for 10 minutes.
  5. Warm refried beans in a microwave-safe bowl for 1-2 minutes.
  6. Spread a layer of beans on one tortilla, top with one-third of the ground beef mixture, and layer another tortilla on top.
  7. Spread enchilada sauce over the top tortilla and add cheeses along with fresh toppings.
  8. Repeat layering with remaining tortillas and transfer back to the oven; bake for about 5 minutes until cheese is melted.
