  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted sweet cream butter (softened)
  • 1 cup light brown sugar
  • 1 cup smooth peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • For the filling: 1/4 cup unsalted sweet cream butter (softened), 1/2 cup smooth peanut butter, 1 1/2 cups powdered sugar, 2 tablespoons whole milk, 1/4 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mix together flour, baking soda, and salt. In another bowl, beat softened butter and brown sugar until creamy.
  3. Add peanut butter, egg, and vanilla; mix well. Gradually add the dry mixture until combined.
  4. Shape dough into balls, flatten slightly on a baking sheet lined with parchment paper.
  5. Bake for about 10 minutes or until edges are golden brown.
  6. For the filling: Beat together softened butter and peanut butter until smooth; gradually add powdered sugar, then milk and vanilla.
  7. Once cooled, spread or pipe filling on half of the cookies and sandwich with another cookie.
