  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. In a mixing bowl, whisk together honey, olive oil, red apple vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken breasts in a resealable bag or shallow dish; pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat your oven to 400°F (200°C).
  4. Remove chicken from marinade and discard the marinade. Place chicken in a baking dish and spoon feta cheese over each breast.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the feta is golden.
  6. Let rest for 5 minutes before serving with parsley garnish and lemon wedges.
