  • 1 box (3.4 oz) instant lemon pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 cups powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)
  • optional milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, combine yellow cake mix, instant lemon pudding mix, eggs, vegetable oil, water, fresh lemon juice, and lemon zest. Beat with an electric mixer on medium speed until smooth (about 2 minutes).
  3. Pour batter into the prepared baking dish and bake for 30-35 minutes, checking doneness with a toothpick.
  4. While the cake bakes, whisk powdered sugar with fresh lemon juice (and milk if using) until smooth.
  5. Once baked and still warm, poke holes in the top of the cake and drizzle glaze over it.
  6. Allow the cake to cool completely before slicing.
