  • ¾ cup sugar
  • 2 large eggs
  • ½ cup vegetable oil (or melted coconut oil)
  • ⅓ cup plain Greek yogurt (or applesauce)
  • 2 tbsp lemon zest
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp lemon juice (for glaze)
  • Optional: ½ tsp lemon zest or ¼ tsp vanilla (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, sugar, oil, yogurt, lemon zest, lemon juice, and vanilla until smooth.
  4. Combine wet and dry ingredients until just mixed; fold in zucchini gently.
  5. Pour batter into the prepared pan and bake for 50–55 minutes or until a toothpick comes out clean.
  6. Let cool before glazing with powdered sugar mixed with lemon juice.
