  • 4 large eggs (separated)
  • 1 cup granulated sugar (divided)
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract (or lemon zest)
  • A pinch of salt
  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat the oven to 325°F (160°C) and prepare an 8-inch springform pan lined with parchment paper at the bottom.
  2. Whip egg whites in a clean bowl until frothy; gradually add 1/3 cup sugar and continue whipping until stiff peaks form.
  3. In another bowl, whisk together egg yolks, remaining sugar, yogurt, cornstarch, vanilla extract or lemon zest, and salt until smooth.
  4. Gently fold in one-third of the whipped egg whites to loosen the batter, then carefully fold in the rest without overmixing.
  5. Pour the batter into the prepared pan and place it in a larger baking tray filled with hot water. Bake for 50–60 minutes until golden and set.
