  • 1 grilled chicken breast, sliced
  • 2 eggs
  • 1 avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple vinegar or lemon juice
  • Salt & black pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Boil eggs for 7-8 minutes. Cool in ice water, then peel and quarter.
  2. In a mixing bowl, combine chopped romaine, diced cucumber, and halved cherry tomatoes.
  3. Top the salad base with sliced grilled chicken, quartered eggs, avocado slices, crumbled feta cheese, and olives.
  4. Drizzle with olive oil and apple vinegar or lemon juice. Season with salt and black pepper to taste. Serve immediately.
