  • ⅓ cup melted butter
  • 8 oz cream cheese
  • 1 egg
  • ¼ cup sugar
  • ½ tsp vanilla extract
  • 7.5 oz pumpkin puree
  • ½ cup evaporated milk
  • ⅛ cup brown sugar
  • ½ tsp cinnamon
  • ⅛ tsp nutmeg
  • ⅛ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. Mix crushed graham crackers, sugar, and melted butter until combined. Press about 1 tablespoon into each liner.
  3. Beat cream cheese until smooth, then add one egg, sugar, and vanilla; mix well.
  4. Gradually incorporate pumpkin puree, evaporated milk, brown sugar, and spices until smooth.
  5. Pour about ¼ cup of filling into each crust and bake for approximately 55 minutes or until set.
  6. Cool in the pan before refrigerating for at least two hours before serving.
