  • 3 tbsp maple syrup
  • 3/4 cup pecans (roughly chopped)
  • 2 tbsp butter (salted or unsalted)
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup flour (Can use oat flour or GF flour instead)

Instructions

  1. 1. Preheat your oven to 425°F (220°C). Bake clean sweet potatoes on a baking sheet for 40-55 minutes until soft.
  2. 2. Cool slightly, then reduce the oven temperature to 350°F (175°C).
  3. 3. Cut each potato lengthwise and scoop out the flesh into a mixing bowl, leaving about 1/4 inch.
  4. 4. Mix in butter, maple syrup, salt, and cinnamon until smooth.
  5. 5. Spoon the filling back into the skins and top with chopped pecans mixed with flour and cinnamon.
