  • 1/2 cup liquid glucose (or light corn syrup)
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your baking sheet by greasing a piece of baking paper and placing it on a tray.
  2. Skewer the apples with bamboo skewers and set aside.
  3. In a heavy-bottomed saucepan, combine sugar, water, corn syrup, and black food coloring. Heat over medium until the sugar dissolves.
  4. Bring the mixture to a simmer without stirring; use a wet brush to wash down any sugar crystals.
  5. Cook until it reaches hard crack stage (150ºC/310ºF). If you don’t have a thermometer, test by dropping some mixture into ice-cold water; it should form hard threads.
  6. Quickly dip each apple into the caramel mixture until fully coated.
  7. Place on greased baking paper and let cool completely before serving.
