  • 4 pounds boneless beef shoulder
  • 1 large yellow onion
  • 1 can (12 ounces) ginger beer/ale
  • 12 cups BBQ sauce
  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk
  • 4 cups shredded sharp cheddar cheese

Instructions

  1. Place the trimmed beef shoulder and sliced onions in a slow cooker or Instant Pot. Add ginger beer/ale and one cup of BBQ sauce. Cook on low for 8 hours or high pressure for 60 minutes; let pressure release naturally.
  2. Cook elbow macaroni in salted boiling water until al dente. Drain and set aside.
  3. In a skillet, melt butter over medium heat. Whisk in flour, then gradually add warmed milk, cooking until thickened. Stir in cheddar cheese until melted.
  4. Shred the cooked beef and mix it into the cheese sauce along with the macaroni. Drizzle additional BBQ sauce on top before serving.
