  • 1 1/4 cup Granulated Sugar
  • 1 cup Pumpkin Puree
  • 1/2 cup Softened Unsalted Butter
  • 1/2 cup Warm Milk
  • 2 Large Eggs
  • 2 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Nutmeg
  • 1/4 tsp Kosher Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease/flour a round cake pan or loaf pan.
  2. In one bowl, mix flour, cinnamon, nutmeg, baking powder, baking soda, and salt; set aside.
  3. In another bowl, cream softened butter and sugar using a hand mixer until fluffy.
  4. Mix in eggs until fully incorporated.
  5. Add pumpkin puree and vanilla extract; mix well.
  6. Combine dry ingredients into wet mixture gently until just combined.
  7. Stir in warm milk until smooth.
  8. Pour batter into the prepared pan and bake for 45–50 minutes (cake pan) or 50–55 minutes (loaf pan), checking doneness with a toothpick.
  9. Let cool for about 15 minutes before transferring to a plate.
