  • 8 ounces block-style cream cheese (softened but still cool)
  • ¼ cup unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a stand mixer, beat softened butter with granulated and brown sugars until fluffy. Add pumpkin puree, egg, and vanilla extract; mix until combined.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Drop heaping tablespoons of dough onto the prepared baking sheet, spacing them two inches apart.
