  • 4 Mini Pumpkins (or ramekins)
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar (plus extra for topping)
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan over medium heat, combine heavy cream and granulated sugar until warm.
  3. In a bowl, whisk egg yolks, vanilla extract, pumpkin puree, cinnamon, ginger, and salt. Gradually add the warm cream mixture while whisking.
  4. Pour into mini pumpkins or ramekins placed in a baking dish filled with hot water halfway up their sides.
  5. Bake for about 30 minutes until set but slightly jiggly in the center.
  6. Cool at room temperature before refrigerating for at least two hours.
  7. Just before serving, sprinkle sugar on top and caramelize with a kitchen torch.
