  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 2-quart casserole dish.
  2. In a mixing bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, combine pumpkin puree, milk, melted butter, and vanilla extract.
  4. Gradually mix the wet ingredients into the dry until just combined; transfer to the greased dish.
  5. Mix together granulated sugar, brown sugar, cinnamon, and chopped pecans; sprinkle over the batter.
  6. Carefully pour hot water on top without stirring.
  7. Bake for about 40 minutes or until set in the center.
