  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until crumbly.
  3. Press two-thirds of the mixture into the bottom of the prepared dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the base layer and spread evenly.
  6. Top with remaining crumble mixture and optional chopped walnuts.
  7. Bake for 30–35 minutes until golden brown and set. Allow to cool before slicing into squares.
