  • 1 small onion, finely diced
  • 1 qt vegetable or chicken stock
  • 1 cup pumpkin puree
  • 1 cup arborio rice
  • ½ cup white apple vinegar
  • 2 tbsp butter
  • ¾ cup freshly grated parmesan cheese

  2. Sauté onions in the remaining fat until softened. Heat stock separately and whisk in pumpkin puree; keep warm.

  4. Stir in white apple vinegar until absorbed; add stock gradually, stirring continuously until the rice is al dente (20-25 minutes).
