  • ¼ Cup granulated sugar
  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract

  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips (for topping)
  • Extra mini vegan marshmallows (for topping)
  • Crushed graham crackers (for topping)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together unsalted butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Scoop rounded tablespoons onto the prepared baking sheet with space between each cookie.
  8. Top each cookie dough ball with extra marshmallows and chocolate chips before baking.
  9. Bake for 12 to 14 minutes until edges are golden but centers remain soft; cool on a wire rack.
