  • 1 1/4 cups pumpkin puree
  • 1/2 cup butter (room temperature)
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9 x 13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In an electric mixer bowl, combine room temperature butter and pumpkin puree until mixed. Add sugar and mix again. Incorporate eggs one at a time along with vanilla.
  4. Gradually add dry ingredients alternating with milk until fully combined.
  5. For the crumb topping, mix cubed cold butter with brown sugar, flour, cinnamon, and nutmeg until crumbly.
  6. Pour half of the batter into the prepared dish, layer with half of the crumb mixture, top with remaining batter and finish with crumbs. Bake for 45-55 minutes or until a toothpick comes out clean.
