  • 170 grams pumpkin puree
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup for glaze

Instructions

  1. Preheat the oven to 175°C (350°F) and grease a springform pan.
  2. In a bowl, whisk together eggs and sugar until frothy, then mix in coconut oil, pumpkin puree, and vanilla extract.
  3. In another bowl, combine flour, baking powder, and pumpkin spice. Gradually add this mixture to the wet ingredients until just combined.
  4. Pour the batter into the prepared pan and bake for about 25 minutes; cover and bake for an additional 20 minutes or until a toothpick comes out clean.
  5. Allow to cool before glazing with a mixture of powdered sugar, milk, and maple syrup.
