  • 1 cup shredded Swiss cheese
  • 3/4 cup sauerkraut, drained and squeezed dry
  • 4 ounces cream cheese, softened
  • 1/2 cup rye breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Oil for frying (vegetable or canola)
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a large bowl, mix together chopped corned beef, Swiss cheese, sauerkraut, and softened cream cheese until fully combined.
  2. Chill the mixture for 20–30 minutes in the refrigerator.
  3. Scoop tablespoon-sized portions from the mixture and roll them into balls.
  4. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of rye and panko breadcrumbs.
  5. Roll each ball in flour, dip it in egg, and then coat it with breadcrumbs.
  6. Heat vegetable or canola oil in a frying pan to 350°F (175°C) and fry the balls for 3–4 minutes until golden brown.
  7. Drain on paper towels and serve hot with spicy Thousand Island dipping sauce.
