  • 4 cups beef broth
  • 1 cup sauerkraut, rinsed and drained
  • 1 cup cooked corned beef or turkey, diced
  • 1 cup diced potatoes
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • 1 cup shredded Swiss cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking for about 3-4 minutes until soft.
  2. Pour in the beef broth and bring to a gentle simmer. Stir in diced potatoes, rinsed sauerkraut, corned beef or turkey, caraway seeds, and thyme. Cook for 15-20 minutes until potatoes are tender.
  3. Reduce heat to low and mix in heavy cream and shredded Swiss cheese until melted and creamy.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with freshly chopped parsley.
