  • 1 bunch radishes, trimmed and halved (some left whole)
  • 4 tbsp olive oil (2 for roasting, 2 for vinaigrette)
  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 2 tbsp red apple vinegar
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a baking sheet, toss trimmed asparagus and halved radishes with 2 tablespoons olive oil, salt, and pepper.
  3. Roast for 20–25 minutes until tender and slightly browned, turning halfway through.
  4. In a mixing bowl, whisk together the remaining olive oil, whole grain mustard, Dijon mustard, red apple vinegar, minced garlic, salt, and pepper until combined.
