  • 12 large baking potatoes (washed and cubed)
  • 7 oz block of feta cheese
  • 1 head of garlic (top sliced off)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Juice from 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup fresh basil, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, toss cubed potatoes with one tablespoon olive oil, thyme, oregano, salt, and pepper.
  3. Place feta in the center of potatoes; surround it with the head of garlic. Drizzle remaining olive oil over everything and squeeze lemon juice over the top.
  4. Cover with aluminum foil and roast for about 40 minutes.
  5. Remove foil; continue roasting for an additional 10 minutes until potatoes are golden brown.
  6. Drizzle honey over the hot dish and garnish with chopped basil before serving.
